At 50% haste the GCD hits a min of 1 s. Good luck getting anywhere near that.

so 1 second GCD is in essence the cap you're saying?

Just looking how to gauge certain numbers. I have about a 25% reduction right now. I can't imagine being able to find another 900 haste until we are looking at level 400 items- lol

with the trinket DFO my haste went to 31%, if icy veins gives 20% haste im going over my cap, not to mention i got the engineering glove enchant 340 haste for 12 sec (1 minute cooldown), and the Black Magic enchant. So should i continue to go for haste or should i go for crit? Maybe switch my sword enchant and engineering profession?

Generally it's better to fire all your cooldowns at once due to the multiplier effect. The exception is if you go over the haste cap after which you are wasting haste. Don't fire off all your cooldowns at once in that case. It would be nice if they'd warn us when heroism was going to happen too so I didn't fire off icy veins.
